Coconut Milk Popsicles

Popsicles are always a childhood favourite. Remember hearing that familiar song of the ice cream truck, running around the house to find your parents and some money, and then chasing the truck down the street with all the other neighbourhood kids? Since it might not be acceptable for me to chase down the ice cream truck anymore I’ve created a more grown up version of this summer childhood favourite. Actually, I created 2 versions. Cause you can never just have one popsicle 😉

Summer memories always seem to involve some type of frozen treat. Whether it’s a scoop of ice cream (that potentially falls on the ground as soon as your leave the ice cream shop), a jumbo freeze from the corner store, or a popsicle dripping down your arm. The best memories are built around food and simple pleasures. Just because we grow up, doesn’t mean we have to stop creating memories (or stop eating popsicles). Bring back simple pleasures of summer with these coconut milk popsicles and let’s build incredible memories 🙂

Coconut Milk Popsicles
 
Ingredients
Strawberry Coconut
  • 1 can full fat coconut milk
  • ⅔ cup frozen strawberries
  • 2-3 tbsp maple syrup
  • ½ tsp vanilla
Matcha Latte
  • 1 can full fat coconut milk
  • 2 tsp matcha powder
  • 2-3 Tbsp male syrup
  • ½ tsp vanilla
Instructions
  1. Make each flavour operate by adding all ingredients to a blender and processing until well combined.
  2. Pour into popsicle moulds and store in the freezer.
If you are using wooden popsicle sticks instead of the ones provided with the popsicle mould, let the popsicles freeze for 1 hour before inserting the wooden popsicle sticks.
